One of the joys of New York: Finding deliciously marbled, frankly labeled cured flesh at your local Polish-Korean-Latin Market.
Exhibit 1: "Canadian Bacon"
Our forebears would WANT us to make the most of the nitrate-infused bounty of booty!
Behold! A quick, (cheap!) comforting dindin of smoked pork butt, egg noodles, sauteed savoy cabbage, and a fried egg.
(There are few foods that can't be improved with a fried egg.)
(And the butt sausage? Like the love child of bacon, ham and smoked pork chops. Get thee to the deli.)
