I miss eating with my mom. Not just because I flat-out miss my mom, but because Momma Foodie eats well, and I learn loads when we share a common feedbag.

Trio Tofu Appetizer--
1. Far left : Shredded cucumber and dried tofu salad with soy-vinegar dressing.
2. Middle : Steam tofu with egg white.
(It is slightly salty, and soft, like creme brulee.)
3. Far right : Baby string bean and bean curd sheet with oyster sauce. (It is a cold salad.)
Cold cut beef tendon--something like jelly/gelatin. No taste.
(I think she's thinking of aspic/terrine. --EF)
Chicken soup in earth pot, Japanese-style.
Baby suckling pig--only 4 pieces but they are all prime center cut, crispy skin, tender meat, and the side salad was refreshing.
Butterfish, deep fried with a touch of light sweet sour sauce. The fish is boneless and moist, just right, not overcooked. The rice crackers (sizzling rice) are freshly cooked and very crispy, not oily.
Pork Trio--
1. Far left: Fried spareribs marinated in shrimp paste.
2. Center: Cube of pork belly cooked in shoyu sauce and sugar--very tender. Presentation is nice, a cooked mini pumpkin holds the meat and sauce.
3. Far right: Deep fried pork cutlet with lemon sauce, like lemon chicken.
Not the usual traditional sweet-sour pork in a chop suey house.
Remember the candy apple or banana dessert, with the thick coating of caramelized sugar that becomes stringy, and has to put in a bowl of ice water to set the sugar?
(I remember! Best Chinese desert EVER! --EF)
It is with this concept that they cooked the sweet sour pork--it is not as sweet as the dessert, it's just right, with a tingly string. GOOD!!
